What’s For Dinner? Chicken Tortilla Soup!

Ok, so it is freezing outside in 90% of the country, and nothing warms the soul and body more than soup! I love Soup Time of the Year!  But I don’t always love the time it takes to get a good soup together.

Enter FitMomma’s Chicken Tortilla Soup. This recipe is from a former FitMomma, Jen, and it takes literally minutes and can be as healthy or not healthy as you want it to be. LOVE that!

Fast Chicken Tortilla Soup

1 lb cooked, diced chicken (or 1 can chicken)
1 can corn, drained
1 can black beans, rinsed and drained
1 can diced tomatoes, undrained (use Rotel for a kick!)
1 can cream of chicken soup (use 98% fat-free)
1 can chicken broth (or 1 cup water and 1 chicken bouillion cube)
1 package taco seasoning mix

Mix together, heat and serve!
Top with lo-fat cheese and/or sour cream, and serve with baked tortilla chips!
Add some hot sauce for an individual kick.

Dietary notes – spicy foods kick up your metabolism, so if you can’t spice up the whole pot with Rotel (my kiddos get mad at me!), add the hot sauce to just your bowl.  Season to your taste.
Also, be mindful of the sodium levels in your chicken broth and taco seasoning mix.  This is where good soups go bad.
And, as already noted, you can make this high fat or low fat or somewhere in between.  Just be aware that fat free cheese does not melt well, so I suggest low-fat dairy products in place of high-fat.

    This was soooo good! I love Mexican food, so this will be entering our meal rotation. Definitely spicy with the Rotel, but my kids (Lily at least) ate it right up and only left the tomatoes.
