Healthy Eats – Wrap It Up!

Any mom knows that planning three meals a day, plus snacks, everyday, for an entire family, Every Day, Every Week, Every Month, Every Freakin’ Year, can be very exhausting.  This is why we so frequently end up ordering pizza or hitting the drive thru.  Because it requires no more brain power than answering “And do you want fries with that?”

Weekday lunches is my particular difficulty, it seems that we eat way too much peanut butter and jelly around here.  Not that that’s a bad lunch (whole wheat bread, all-natural peanut butter, whole fruit spreads), but still.  Variety is the spice of life, no? So today, I’m gathering my FitMomma friends for a Healthy Eats lunch – a way to get ideas from other moms in the same situation and stir up some creativity in the kitchen, without too much extra work.

Today is Wrap day.  Wraps.  They are so incredibly easy, and the best part is that with a handful of ingredients, you can cater each wrap to your family’s individual needs.  How to do it?

Start with some whole wheat or multi-grain tortillas.  Do check your labels here – you want low fat, high fiber and stay away from the partially hydrogenated oils (read: Trans Fat).
Lean meats – lean turkey, roast beef, ham, chicken breast, tuna, fish.  So many options here.
Spreads – personally, I love flavored hummus spreads for adding serious dimension to an otherwise flat wrap.  Roasted garlic, roasted red pepper, sun-dried tomato.  So many options.  Throw in some lo-fat mayo or Miracle Whip, and a variety of mustards.
Veggies – this is where it gets fun!  Lettuce, carrots, avocado, cucumbers, sprouts, tomato, the sky is the limit here.  Each item you put in adds a new layer to the wrap, in flavor and texture, so have fun and Do Not be afraid!
Other toppings – personally, wraps became a favorite for me when I added sunflower seeds one day.  So don’t be afraid to add something that doesn’t sound like it belongs on a sandwich.
