What’s For Dinner? Tacos!

You’ll catch on quickly that we love our Mexican food around here.  And one of the easiest favorites we have is Taco Night.  At least once a week!  And believe it or not, with a few modifications, you can have a healthy taco night for the family, with next to no complaints.

We use either the 90/10 ground beef or the 93/7 ground turkey breast from Aldi.  It’s worth the extra money, plus you don’t have to drain off grease!
Prepare meat like regular tacos – again, watch the sodium levels in your taco seasoning.  (I really need to invest some time in a simple, flavorful alternative to store-bought mix!)

Now set up a mini-buffet – chopped lettuce, chopped tomatoes, chopped or sliced avocado, salsa, lo-fat cheese, lo-fat sour cream.
And at my house, I prepare a couple regular taco shells, whole wheat tortillas, and some whole-grain tortilla chips.  The kids make traditional tacos while I make myself a taco salad!

Crunch a small handful of tortilla chips into the bottom of a bowl, top with a load of lettuce, meat, salsa and avocado. Yum, Yum, Yum, and not a calorie disaster that many Mexican meals can be.

If you’re feeling adventurous, open up cans of whole kernel corn and black beans, and toss those in as well.  You’ve just made a low fat, high fiber, delicious dinner!
