What’s for Lunch? Cheesy Apple & Turkey Quesadilla

Cheesy Apple & Turkey Quesadilla - Yum!

While my working out may be sucking this week, I’m kicking butt in the food department.  I whipped up a super-quick-n-easy lunch today that was so simple, yet so scrumpdillyicious.  Enjoy!

Cheesey Apple & Turkey Quesadilla

Whole Wheat Tortilla
A Couple slices of lean turkey
1 slice mozzarella cheese
Handful of thinly sliced Pink Lady apples
A couple avocado slices

Spray a skillet with Pam.  Place the tortilla in the pan on medium-high heat.  Place the cheese, then turkey, then apple on half of the tortilla, then fold tortilla in half.  Cook a couple of minutes on both sides, until cheese completely melted.  Cut in half, serve with avocado slices.

Notes:  I chose mozzarella, because it had only 5 grams of fat vs. the 9 grams the Colby-jack was sporting.  Remember that, while incredibly healthy, avocados are high in fat as well, so you may opt to omit one of the two if you’re counting fat grams.

    Yum! Thanks Amy! I make my kids cheese and cheese and ham quesadillas all the time, but never thought to put apples on them. Great idea. I will be trying them after my next store run! And don’t worry about not having real workouts, the most I have done this week is playing and house work as well. Spring is on the way!!
