What’s for Dinner? Lemon Chicken!

Now that be a plate o' chicken!

Well, I am clearly miserable with this Poison Sumac rash I got going on.  And the thought of doing anything other than sleeping seems too taxing.  So since I can offer little inspiration (could use a little myself!), nor do I have any fantastical tales from the workout front, hows ’bout a recipe?

This is a delightful little take on some standard chicken, a recipe adapted from my Pampered Chef “Casual Cooking” cookbook.


Lemon Chicken

4 lbs boneless skinless chicken breasts
2 lemons
3 garlic cloves, pressed or minced
2 tblsp olive oil
2 tsp dried oregano
1 tsp paprika
salt & pepper to taste

1.  Zest lemon to measure 1 tablespoon zest.  Then juice lemons to measure 1/2 cup lemon juice.
2. Combine zest, juice, garlic, oil, and spices in a bowl and wisk together.  Add chicken and marinate 2-4 hours.
3.  Grill, broil or bake chicken (20 minutes at 350).

Serve with brown rice and broccoli for a simple, healthy meal!
